Description
Typically roman "Paglia e Fieno" (hay and stray) is a egg and spinach pasta in a mushroom and peas cream sauce.
Ingredients
150 | Gram | egg fettuccine |
150 | Gram | spinach fettuccine |
200 | Gram | white mushrooms |
200 | Gram | peas |
200 | Gram | pancetta (optional) |
1⁄2 | onion | |
1⁄2 | Cup | heavy cream |
2 | Tablespoon | butter |

In the meantime fry the onion and pancetta (if using it) in the melted butter using a skillet for a few minutes.
Add the sliced mushrooms and keep sauteing until brown (5-10 minutes). Add the peas and after 5 minutes add the cream.
Cook for a further 5 minutes.
After the pasta is cooked, drain it reserving some cooking water and add the drained pasta to the sauce pan.
Saute a 1 or 2 minutes (add some of the reserved water if too dry) and serve immediately.
